Oscar decided to develop his own decaffeination method using ethyl acetate (EA).
Los Nogales produces large amount of coffee cherry husks, which are placed in barrels until they release their juice. Oscar then adds a proprietary yeast strain that he cultivated himself, which initiates the creation of inoculated EA in the liquid.
The juice is mixed with the hulled coffee beans, which are still protected by their parchment layer. The EA binds to the caffeine, effectively removing it.
This process is carried out over multiple cycles with varying durations, which is part of Oscar’s unique know-how for decaffeinating coffee.
One significant advantage of this process is that the decaffeination process happens directly on the farm with fresh coffee cherries, which are protected by their natural membrane.
Typically, decaffeination is done on processed beans, which can negatively affect the coffee’s quality.

Barista's Recommendation:
For the best flavors, pour water at 100°C over the coffee. The idea that higher temperatures can "burn" the beans is a myth. We roast them at 600°C, so there’s no way to "burn" them during brewing. Always use filtered or bottled water with an alkalinity of 60–80 ppm.
Good to Know:
For filter coffee preparation, always use beans that are at least 7 days post-roast. After opening the bag for the first time, let it vent for at least 4 hours before brewing. This helps avoid unwanted bitter notes in the flavor.
